Description: Why does a salad cost more than a hamburger? Why is high-fructose corn syrup in so many different foods? This writing-intensive course critically examines the political and economic forces that have shaped the U.S. food system, and their impacts on our dietary habits, the prices we pay, and food availability in different neighborhoods. Topics addressed in readings include the development of government dietary guidelines, the economics of agriculture, food scarcity, and food assistance programs.
